Recipe For Plain Roasted Potatoes

Here are the ingredients you need to cook plain roasted potatoes:

  • 4 large peeled and cubed potatoes
  • 1/8 cup of olive oil
  • ½ teaspoon of crushed red pepper flakes
  • ½ teaspoon of dried marjoram
  • ½ teaspoon of dried oregano
  • 2 teaspoons of minced garlic
  • ½ teaspoon of salt
  • ½ teaspoon of dried thyme
  • ½ teaspoon of dried dill weed
  • ½ teaspoon of dried parsley
  • ½ teaspoon dried basil

Preheat the oven to 475 degrees F. In a bowl, mix red pepper flakes, salt, oil and other herbs including garlic, dill weed, marjoram, parsley, thyme and oregano. When all the ingredients are combined, take the cubed potatoes and mix them with the first mixture. Toss them gently until all the potatoes are mixed thoroughly. After this, place the potatoes in a baking pan. The potatoes should be put in a single layer.  Next, place the baking pan with potatoes in the oven and roast it for 30 minutes. Occasionally turn the potatoes until all the potatoes are completely brown.

Recipe For Onion Roasted Potatoes

Here are the ingredients you need to cook onion roasted potatoes:

  • 1 large sweet onion, chopped coarsely
  • 3 pounds of unpeeled red potatoes
  • ¾ teaspoon of black pepper
  • 1/3 cup of mixed fresh herbs
  • 2 tablespoons of butter
  • 3 garlic cloves, minced
  • 3 tablespoons of olive oil
  • ¾ teaspoon of salt
  • Rosemary sprig

Preheat oven at 475 degrees F. In a small bowl, mix oil, pepper, garlic, butter and salt. Put this mixture aside. In a roasting pan, place the onions and potatoes and pour the mixture  over them. Use a spatula to toss the onions and potatoes really well until they are thoroughly coated. Put in oven and after 30 minutes, remove the pan from the oven and stir the potatoes and onion, then put it back in the oven for another 10 minutes. Once done, add the herbs. Roast again for another 10 minutes until the potatoes are cooked.
